這個波特菇其實是很久之前做的了, 但一直沒時間寫文
(想寫的東西太多了啦!  是說來偷偷做個小問卷:

i actually cooked this mushroom long time ago, but haven't had a chance to write about it. (there're just too many stuff i want to write!)

我很喜歡烤箱料理! 因為只要丟進去定個時間  就可以揮揮衣袖不帶走一片雲彩的離開做其他事~  而且油煙又少, 根本皆大歡喜!  

我最常做的一道菜應該就是烤雞腿(or thighs),
一次可以烤個七八支 (沒有要罵人的意思)
目前應該做了10次有吧, 實在是太方便+好吃!  

而今天要介紹的也是烤箱料理, 還多了個bonus, 就是奶油菠菜~~
住台灣的人可能比較不清楚奶油菠菜是什麼,
但如果住美國, 吃玉米片的時候應該多少有沾過那個
綠綠的  充滿起司  超牽絲的菠菜醬吧! (spinach dip)  
沒錯, 它就是奶油菠菜!

下面的食譜會教大家怎麼做奶油菠菜, 單吃就超美味!
(拿來沾chips或直接挖著吃 –w– )

然後再進一步將它加到波特菇裡, 與其它食材相親相愛, 一起進烤箱~ 
個人覺得是非常適合當早午餐的一道輕食, 晚餐如果想吃少一點也很適合 :D

i really love oven recipes! coz all you need to do is throw the dish inside the oven and set the timer, then you can walk away without worrying about anything~ plus the smoke is minimal compares to pan fried. the one dish i most often cooked is probably grilled drumsticks (or thighs). i could bake 7 - 8 pieces at a time. i think i've cooked it for at least 10 times by now coz it's just too convenient & delicious!

and today i'm introducing you guys a super easy oven recipe with a bonus recipe which is cream spinach!
the ones who live in taiwan might not know what cream spinach is, but if you live in the state, most likely you have encountered it when you ate corn chips. that greenish, cheesey spinach dip. yep, that's cream spinach!

below recipe will show you how to make cream spinach. it's yummy enough by itself!  then we'll add the spinach to portobello mushrooms along with some other ingredients, together they go into the oven! 

personally i think it's a great dish for brunch. or even when you want something lighter for dinner, this is perfect too. :D



奶油菠菜
改編自 my name is yeh

ingredients

菠菜切碎

奶油

洋蔥1顆切丁

黑胡椒

七味粉

蒜末

麵粉2匙

鮮奶油半杯 (heavy cream)

乳酪絲 (隨便一種都可以 我用綜合)

direction

  1. 中火熱鍋   放入奶油

  2. 奶油融化後   加洋蔥丁

  3. 加黑胡椒鹽、七味粉   拌炒約5分鐘

  4. 加入蒜末   拌炒約1分鐘

  5. 加入麵粉   拌勻

  6. 倒入鮮奶油  拌勻, 煮至濃稠

  7. 加入菠菜拌炒至菜葉變軟

  8. 加入乳酪絲   拌勻

  9. 試一下味道, 依個人喜好調味 (可加更多鹽/黑胡椒/乳酪…etc)


cream spinach / spinach dip

ingredients

spinach, chopped

2 tablespoons butter

1 onion, chopped

salt

black pepper

shichimi

3 garlic cloves, chopped

2 tablespoons flour

1/2 cup heavy cream

1/2 cup any kind of grated cheese

direction

  1. melt butter in a pot over medium heat.

  2. add onion.

  3. season with salt, pepper, shichimi. cook for 5 minutes until onion softens.

  4. add garlic. stir and cook for 1 minute.

  5. stir in flour until combined.

  6. stir in heavy cream. cook until thicken.

  7. add spinach. cook until softens.

  8. add grated cheese. stir until combined.

  9. taste it and add more salt, pepper, cheese...etc. if desired.



奶油菠菜太陽波特菇

ingredients

波特菇洗淨去蒂 

奶油菠菜

培根切丁

乳酪絲

黑胡椒

direction

  1. 烤箱預熱375°F

  2. 在波特菇上圍一圈奶油菠菜

  3. 在中間的凹洞裡打一顆蛋

  4. 放上培根丁

  5. 撒上乳酪絲

  6. 撒一點黑胡椒

  7. 放上烤盤  進烤箱烤18分鐘

ingredients

clean portobellos (stems removed)

cream spinach (recipe above)

eggs

bacon, chopped

grated cheese

pepper

direction

  1. preheat oven to 375°F.

  2. put a ring of cream spinach on top of portobello.

  3. crack an egg in the hole.

  4. place bacon on top.

  5. sprinkle some grated cheese.

  6. grinds of fresh black pepper on top.

  7. place on baking tray, and bake for 18 minutes.


在這有個小提醒: 菇類煮熟都會出大量的水, 波特菇也不例外
所以從烤箱裡拿出來時  其實烤盤像個小池塘  哈哈哈

我是把菇拿出來  放在廚房餐巾紙上吸一下水才擺盤~

here's a disclaimer: all mushrooms release waters after cooked. portobello included. so when i took them out from the oven, there's like a puddle inside the baking tray lol. what i did was removing the protobello and place them on top of paper towels so the waters get blotted. then i put them on the wooden board. 

烤出來的菇表皮脆脆的, 但奶油菠菜還是很軟嫩~  
整體非常香!  濃郁的乳酪融化在嘴巴裡很幸福…
有種像在吃牛排的感覺也很有趣   哈  (刀叉上場)

喜歡菇類的人應該會很喜歡這道!  
不想站在火爐前忙東忙西的時候   就試試看這個烤箱料理吧~

the cheese on top is crusted, but the cream spinach is still soft and creamy. i love how the cheese melts in my mouth... 
and the way to eat it is kinda interesting too, felt like i was eating a steak (with the fork & knife)  hehe

if you love mushrooms, or you don't want to stand in front of the stove for hours, you should try this out!
